Detox Green soup: Kale and Broccoli

Here i am back in town, back on the www and back with that strong wish to get a bit healthier after all those yummy but heavy Christmassy meals. I spent the last two weeks at my moms and found in between the renovations some time to cook this delicious light soup. It is for me the perfect way to balance my diet and find some vitamins to fight the cold.

Kale is one of the most nutrient food containing high amounts of Vitamins A, C, K, as well as fiber, magnesium, iron and more calcium per calorie than milk... Something noteworthy when you were, as me, a big consumer of milk products.

Broccoli on its side contains many nutrients, such as folate, soluble and insoluble fibre, vitamins C and A, and calcium, which are needed for numerous functions in the body.

Ingredients:

  • 1 tablespoon of olive oil
  • 1 diced onion
  • 2 crushed garlic cloves
  • 4 cups of vegetable broth
  • 1 broccoli
  • 2 handfuls of kale
  • salt and pepper

Place in a hot pan some olive oil with the onion and the garlic. Let it turn gold after few minutes. Then add the broth, the kale and the broccoli. Bring it back to boil then let it simmer for 5-10minutes so the broccoli cooks. Add salt and pepper as desired, even though i think broth brings enough salt to the soup. Blend the soup until it gets smooth.

Enjoy !

PS: you can add tahini, lemon, cream (for the more hungry) on top of it :)

Veggie tart ... the easy way

Ok so i was not planning on posting this "recipe" for the simple reason it seemed too simple and ordinary ! But hey ! Aren't the most simple recipes the best ? Plus loads of friends asked me for it. So here it is :)

Ingredients:

  • 1 roll of pie crust
  • cherry tomatoes
  • 1 eggplant
  • artichokes hearts (usually presented in a jar with olive oil)

Place the pie crust in a pie plate, jab the crust with a fork and place it in the preheated oven (180C, thermostat 5/6) for 5 minutes or so.

Place the thin slices of eggplant (i cut them in their length, slices are 50mm thick or so), and thesliced in two cherry tomatoes on the crust. Cook it for 20 minutes.

Final touch being the artichoke you simply add on top !

I told you ! Nothing crazy about this, but it is all yummy!

Banana/Choco (flat!) Vegan muffins

I did not thought i would put the recipe online as i was not 100% success (at least from my point of view), nonetheless few of you asked me to put it online and were daring enough to want to try it. Haha no ok it is not that bad.. it simply does not look good. And we know with food if it does not look good then it won't taste (that) good, even though it can be ugly and yummy of course !

Ingredients:

  •  2 bananas
  • 160g of flour
  • 80g of brown sugar
  • 10g of baking powder
  • 60gr of tasteless oil
  • dark chocolate

Mash the bananas in a bowl and add to it the sugar, mix, the flour, mix, the baking powder, mix, the oil, mix.

Crash the chocolate in chunks and add it to the mixture, and .... mix !

Fill the muffin plate with the dough and place it in the preheated oven at 180C and bake for 15-20 minutes !

On my side they came out flat... i am sure this recipe would need some improvements. So please share it here if you find any way to make them look real YUM !

Crash Test: Vegan Feta

You already probably know it but i am slowly but surely turning vegan and i am exploring in the process the vegan cooking. So here i am back at it again this week, discovering the vegan cheese. Ok, i am french and this must sounds like heresy to some but i am simply done with the milk industry (wanna know more read this).

I called this recipe crash test as this is totally new to me and i don't know if the end result is what a vegan feta should be, but overall i found it conclusive ! Call it feta or not it is good ! So first let's cook it...

Ingredients:

  • 145g of almond powder
  • 60ml of lemon juice
  • 125g of water
  • 3 tablespoon of olive oil
  • 1 teaspoon of salt
  • 2 crushed garlic cloves

Mix all ingredients in a pot until it gets homogeneous though it will be lumpy because of the almond powder.

Cover a bowl with a colander and add inside a muslin (if you don't have one, use compress like i did). Pour the mixture in. Bring the sides of the muslin to the center and tie them together with a rubber band so it forms a little bundle. Let it drain in the bowl for 12 hours in your fridge.

After that, preheat the oven to 180C. Open the bundle, and place the "cheese" on a baking paper sheet. Let it cook in the oven for 25 minutes.

Conclusion:

It would hard to confuse this vegan cheese with real fetaBUT you can definitely taste some feta in it. Explaining myself, the lemon in it bring the acidity you can have in feta, the garlic/almond combo does give to it its little nutty taste and the texture of almond does remind me the texture of feta. Nonetheless, the taste of almond is quite present, as well as garlic (maybe reduce the garlic to one clove ?).

Nonetheless it does taste great ! I really like it and could see it spread on some bread with fresh tomatoes and basil. It is something to try and to play around with for sure !

Sunday's egg free/ gluten free pancakes

Ok i also got to wake up with that irresistible envy of pancakes. It is such an eays yet comfy thing to do and eat ! Haha.

I know pancakes recipe are very easy and don't necessarily need a recipe. Anyhow, i wanted to post about this one as it does not use eggs. If you know me already, i am gently but surely turning vegan and taking away the use and consumption of eggs makes me happy. By the way, a quick little note about those saying organic eggs are just fine cause NO IT IS NOT. The only difference with a regular egg is that chickens are not in cage, less per sqm and can have access outside BUT male chicks are still shredded into pieces or suffocated in plastic bags, female chicken are still being killed one year after their first egg laying and they can have their beak cut. Vegan diet is a very personal choice and i respect individual choices. So it's only up to you :)

Anyway back to the topic, those pancakes were AS GOOD if not BETTER than the usual one. You know that adage saying "you are what you eat" right ? Well this makes you feel better inside for sure !

Ingredients (for 1 person):

  • 65g of rice flour
  • 1/2 banana
  • 125 ml rice milk
  • baking soda
  • salt
  • fruits to put in: kiwis, bananas, strawberries,...
  • any flavoring of your wish: vanilla extract, cinnamon powder, ...
  • any toppings of your desire : chocolate syrup, honey, jam, coconut shavings,...

Mix in the rice flour, the 1/3 tsp of baking soda, the 1/3 tsp of salt. Mashed the 1/2 banana on side, it will replace the egg in this recipe. Mix the banana with the flour then gradually pour the milk in the flour while stirring so you avoid lumps. I added myself the vanilla extract but you could also incorporate cinnamon powder.  Cook in a pan with some coconut oil. My little touch is to add straight into the dough in the pan some fruits: kiwis, bananas, and strawberries work very well.
