Tapioca Kiwi sweetness

I don't know what happened to me this morning but i woke up with an intense desire to cook ! Cook small easy recipe, but cook. You know do with your own hands your own good :). Using the ingredients i bought yesterday at the organic market... Nourishing the mind and body from in and out !

The first one i did is that easy Tapioca/Kiwi/Coconut sweet dessert. It goes peferct also in your Sunday brunch.

Ingredients (for 4 little pots like the one above):

  • 25g of tapioca
  • 200ml of coconut milk
  • 100ml of dairy free milk (i used rice, depending on your needs on protein ; soy milk is better then)
  • 2 kiwis
  • brown sugar/honey

Heat in a saucepan the coconut milk and the dairy free milk until it starts boiling (keep an eye on it it goes fast !) and add the tapioca in for 7-10 minutes (until it gets translucent), keep stirring. Meanwhile prepare little pots with thinly sliced kiwis at their bottoms. Let the tapioca cool down then pour it in the pots. Top it off with some sugar or honey (which is believe is better !) and enjoy !
